We ran out of eggs but had egg whites. Here was my solution! I guess my style of cooking is called "problem solved cooking" I look what i have in my house and create from there. This recipe was super easy and is super healthy! Simple egg white frittata with coconut oil over sprouted grain toast topped with my homemade guacamole recipe.
Egg White "Frittata"
2 Cups egg whites
Sea salt and black pepper to taste
1 tbsp coconut oil
3-4 slices Ezekiel Bread (optional)
"Guac" Ingredients
3 ripe avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium red onion, diced
1 tablespoon chopped cilantro
1 clove garlic, minced
Instructions
Turn the oven on on the broiler setting. In a large bowl place guac the ingredients. Using a potato masher mash all the ingredients together! Chill in the fridge to serve over the eggs. Heat the coconut oil over the stovetop in an oven-safe pan. Add the egg whites, salt and pepper. Cook for a few minutes to get the bottom of the egg whites cooking. Remove the pan from the stove and place in the oven for another 5 minutes or so, or until the top of the egg is cooked. Place your bread in the toaster. If you're paleo or eating anti-inflammatory you can absolutely leave this step out. Remove the eggs from oven. Slice the eggs and place over the bread or on a plate. Finish with a dollop of your homemade guac. Enjoy!
