In an effort to switch up the usual rice and potatoes side dishes, here's a healthy and simply prepared bean salad packed with all of your macronutrients, even fiber! Adding fiber to your diet is great to help keep you regular. Enjoy!
Tri-Color Bean Salad
Ingredients
1 15oz can organic black beans rinsed and drained
2 ears of corn, kernels cut off the cob
1 small red and yellow organic pepper diced
1 small shallot chopped
3 gloves garlic minced
3 tbsp extra virgin olive oil
1/4 tsp salt
1 small lime seated and juiced
Dash or two of cayenne pepper
Handful of fresh parsley or cilantro
Instructions
Mix all of the ingredients together in a glass mixing bowl except for the parsley or cilantro. Allow the salad to chill for a few hours. Prior to serving toss in the parsley or cilantro.
