TACO TUESDAY

Simple recipe, simple ingredients, simply delicious! Change up your Taco Tuesday with these meatless tacos. 

Ingredients
2 cups cooked lentils, I used french green
Nonstick olive oil spray
1 yellow onion, chopped
2 garlic cloves, minced
1 bell pepper
1 jalepeno, or omit if you don't like the heat
1/2 cup grape tomatoes, halved
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp smoked paprika (I LOVE THIS SPICE) 
8 six-inch corn tortillas or butter lettuce leaves
Optional toppings, Avocado, Cilantro, Salsa

Instructions
If you're using uncooked lentils, cooke 1 cup as written on the package. This amount will yield two cups. 
Over medium heat, sauté onions, garlic and peppers to a large with the non-stick olive oil spray for about 5 minutes or until the onions become translucent and the peppers soften. Add the halved tomatoes, 2 cups cooked lentils, chili powder, smoked paprika, cumin, and garlic powder.  When the onions have softened, add tomatoes, 2 cups cooked lentils and spices. Continue to sauté over medium heat until the ingredients are well mixed. 

Heat tortillas on a dry pan or in a toaster oven for about a minute on each side. Fill each tortilla with 1/4 cup lentil taco meat and dress with desired toppings -- avocado, salsa, cilantro, etc. Or you can do what I did and use lettuce wraps for a lower carb option!
